Sandals Grande Antigua’s New Executive Chef Carl Miller returns to Sandals Resorts

 

After spending the past few years trekking the globe on culinary assignments that have taken him far afield to places as exotic as Ethiopia and Afghanistan, Executive Chef Carl Miller has returned to Sandals Resorts with International flair and a wealth of culinary expertise.  The benefactor of this epicurean journey: the lucky guests of Sandals Grande Antigua Resort & Spa.

While abroad, Miller had the pleasure of preparing meals for some of the world’s most noted celebrities and dignitaries including: actors Danny Glover, Brad Pitt and Oprah Winfrey, former British Prime Minister, Tony Blair, South Africa’s President, Thabo Mbeki and former Secretary General of the United Nations, Kofi Annan.

 

Trained at the Culinary Institute of America in NYC, Miller most recently worked for Le Cordon Bleu culinary school in Miami, FL where he was an Instructor Chef.  Miller began his career at Sandals Resorts in 1998 at the flagship resort, Sandals Montego Bay, and is looking forward to returning to the company where he first got his start.  “I have come full circle and am looking forward to sharing my experience with guests of Sandals,” Miller said.  “Dining is one of the most important aspects of a resort vacation and at Sandals, where there are so many outlets for guests to choose from - quality and variety of experience are paramount.  Our [Sandals] guests are sophisticated travelers who appreciate fine dining and I am excited to once again be playing a role in the enjoyment of their precious vacation time.”

There are 4 Restaurants at Sandals Antigua Caribbean Village & Spa:

Il Palio Restaurant - One of the most colorful, elegant restaurants specializing in regional Italian dishes with an antipasto bar and open pasta kitchen. Hours: 6:30pm-9:30pm. Reservations are required. Men must wear a shirt with collar and dress pants.
Bayside Restaurant - Experience gourmet cuisine indoors by candlelight or outdoors overlooking the moonlit sea. Reservations are not required at this restaurant. Men are required to wear a shirt with collar and long pants.
Kimonos - A specialty restaurant serving Oriental cuisine prepared tableside by an entertaining chef. Hours: 6:45 pm-9:30pm. Reservations are required. Men must wear a shirt with collar and dress pants.
OK Corral Restaurant - Experience a Western-style grill in a casual setting with panoramic views of the ocean. Hours: 6:30pm-9:15pm. Reservations are required.


Reviews

The Food:

Breakfast is served at two locations, one at the Bayside on the Carribbean Grove side (Outdoor near the beach), and at Mario's We ate at both, but the selection was better at Mario's.

Lunch is served at the Bayside (Caribbean Grove), Barefoot by the Sea (Med. Village), Mario's and the Pizzaria outside of Mario's (Med. Village). We at at the Bayside once, buffet style, various selection. We ate at Marios a few times, more Italian with various pasta dishes. Barefoot by the Sea was great for Burgers, Jerk Chicken, and Salads. The Pizzaria was great. Made to order pizza and calazones. Place your order before 12:00 noon. No take out orders between 12 and 2:00 p.m..

Dinner is served at these restaurants on the Caribbean Grove Side: OK Corral, Bayside, Kimono's and Eleanor's. We only ate at Eleanor's and I highly recommend the grilled lobster! I was not impresseed with Kimono's. I frequent my hometown Japanese steakhouse and it's not anywhere close to the quality I'm used to.
If you like Sushi, you need to visit the Sushi Bar at the base of Kimono's. We ate there three times! Great sushi menu!! Mario's was okay for dinner, but much better for lunch! Last but not least, Cicketeer's Pub. All I can say is WOW. The Prime Rib is VERY tasty. The hot wings are out of this world! Cricketeer's was our nightly hang out, and has a great atmosphere. I highly recommend it.

Bayside – We ate here when they had the International Buffet. There were a ton of choices. I usually don’t like buffet for dinner, but it was pretty good.

At first I didn’t like the thought of the reservations system, but you show up at the restaurant and you are seated. They only down side is that you are done with dinner in an hour or less. They had shows in the CV and a band outside Mario’s, but we never made it pass 9:30pm

It was awesome. The facilities were terrific. The best place to eat was Mario's. We were highly disappointed with Kimonos though. The one thing I didn't like were the peddlers on the beach. But Sandals can not control that since the beachs are public. Before we went we read alot of negative reviews and we were worried, but in the end we were completely happy with our honeymoon.
